Savory Cream of Wheat (Grits Replacement)

Picture
Ingredients for 2 servings:

2 cups whole milk
1/3 cup cream of wheat (farina)
1 tbsp. butter
1/2 tsp. each (more or less as desired):
  • rosemary leaves (optional)
  • onion powder
  • garlic powder
  • red pepper flakes (optional)
  • salt
Black pepper (to taste)
1 tbsp. parmesan cheese
1/3 cup sharp cheddar cheese

Cheese grits are a beloved dish in the black community. Yet, although some of us may have grown up eating them, grits are not in accordance with How to Eat to Live.
How to Eat to Live Book 2, chapter 26, page 96: "Do not eat popcorn; eat fresh corn in its milk stage (known as milk corn). And do not eat hominy grits."
Grits are very course. They are not the appropriate type of corn for us to eat. Fortunately, a suitable substitute is cream of wheat (also known as farina). Both are popular hot breakfast cereals, both can be eaten sweet or savory. When we know better, we do better.
Directions:
  1. Set aside the cheddar cheese.
  2. In a medium-sized pot, whisk together all other ingredients.
  3. Place the pot on the stove and cook over medium heat. Whisk it frequently to avoid lumps. Continue cooking until the cream of wheat thickens to your desired consistency. You can add more milk to thin it (it will continue to thicken as it sets so if you want it thicker, just wait).
  4. Remove the pot from the heat and whisk in the cheddar cheese.
  5. Serve immediately.
It is best to wash out the pot as soon as possible, or at least rinse it and fill it with water. Cream of wheat is more difficult to rinse away after it cools.
