Herb Roasted Salmon

Ingredients:

6 tbsp olive oil
2 cloves garlic
1 tsp basil
1 tsp salt (more or less depending on preference)
1 tsp pepper
1 tbsp fresh chopped parsley
1 tbsp old bay seasoning
2-3 salmon fillets

Optional- lemon wedges
As-salaam alaikum.

This is a very simple, but delicious recipe for pescatarians. Begin the preparation one day in advance to allow time for marinating. Salmon makes a great presentation with minimal effort.

Tip: serve along vibrantly colored vegetables to enhance visual appeal.
Directions:
  1. Set the salmon fillets aside.
  2. In a large bowl, mix all other ingredients together to create a marinade.
  3. Add the fillets one at a time, making sure to coat them well. Cover the bowl or move the fillets into large ziploc bags. Let them marinate 12-24 hours, turning the fillets halfway through. Twenty four hours is ideal.
  4. Fold the individual fillets smothered in the marinade in parchment paper. Place the wrapped fillets in a cake pan to prevent any excess oil from spilling in the oven.
  5. Bake on 375 for 25-35 minutes depending on the size of fillets. It is fully cooked when it is opaque throughout. Do not overcook.
